Step-by-Step Recipe for Detroit-Style Pizza


Ingredients

For the Dough 

- 500g bread flour  

- 350ml warm water (70% hydration)  

- 10g salt  

- 7g instant yeast  

- 10g olive oil  



For the Sauce

- 400g canned crushed tomatoes  

- 2 cloves garlic, minced  

- 1 tsp dried oregano  

- 1 tsp chili flakes  

- 1 tbsp olive oil  

- Salt and sugar to taste  



For the Toppings

- 300g Wisconsin brick cheese (or a blend of mozzarella and cheddar)  

- 100g pepperoni slices  

- Fresh basil or parsley for garnish  



Instructions


Step 1: Prepare the Dough 

1. In a large mixing bowl, combine the bread flour, yeast, and salt. Gradually add the warm water and olive oil, mixing until a shaggy dough forms.  

2. Knead the dough on a floured surface for 10 minutes until smooth and elastic.  

3. Place the dough in a greased bowl, cover with a damp cloth, and let it rise for 2 hours or until doubled in size.  


Step 2: Shape the Dough

1. Preheat your oven to 260°C (500°F).  

2. Grease a rectangular Detroit-style pizza pan (10x14 inches) generously with olive oil.  

3. Transfer the dough to the pan and gently stretch it to cover the bottom and edges. Let it rest for 30 minutes to relax the gluten.
