Aalu ki Qatliyaan is a popular Pakistani dish! It's a flavorful and spicy potato curry made with tender potatoes, onions, garlic, ginger, and a blend of spices. Here's a simple recipe for Aalu ki Qatliyaan:


_Ingredients:_


- 4-5 large potatoes, peeled and cut into small pieces

- 2 medium onions, chopped

- 3 cloves garlic, minced

- 1-inch piece ginger, grated

- 1 teaspoon cumin seeds

- 1 teaspoon coriander powder

- 1 teaspoon turmeric powder

- 1 teaspoon red chili powder

- 1 teaspoon garam masala powder

- Salt, to taste

- 2 tablespoons vegetable oil

- 2 tablespoons chopped fresh cilantro (optional)





_Instructions:_


_Step 1: Cook the Potatoes_


1. Heat oil in a large pan over medium heat.

2. Add cumin seeds and let them sizzle.

3. Add chopped onion and cook until browned (5-7 minutes).

4. Add minced garlic and grated ginger. Cook for 1 minute.

5. Add the potato pieces and cook until they start to brown (5-7 minutes).


_Step 2: Add Spices and Simmer_


1. Add coriander powder, turmeric powder, red chili powder, garam masala powder, and salt. Mix well.

2. Cook for 5-7 minutes or until the potatoes are tender and the spices have melded together.

3. Add 1-2 cups water to the pan and bring to a boil.

4. Reduce heat to low and simmer, covered, for 10-15 minutes or until the potatoes are fully cooked.





_Step 3: Garnish and Serve_


1. Garnish with chopped fresh cilantro (if using).

2. Serve the Aalu ki Qatliyaan hot with naan bread, rice, or roti.
