How to make delicious chicken curry
Servings:4-6 people
Ingredients:
1 1/2 pounds boneless, skinless chicken breast or thighs, cut into bite-sized pieces
- 2 medium onions, diced
- 3 cloves of garlic, minced
- 1 medium tomato, diced
- 1 tablespoon grated fresh ginger
- 1 teaspoon ground cumin
- 1 teaspoon curry powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (optional, adjust to taste)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons vegetable oil
- 2 tablespoons tomato puree
- 1 cup chicken broth or water
- Fresh cilantro, chopped (for garnish)
Instructions:
1. Heat oil in a pan: Heat 1 tablespoon of oil in a large pan over medium heat.
2. Sauté onions: Add the diced onions and sauté until they're translucent and starting to brown (5-6 minutes).
3. Add ginger and garlic: Add the minced ginger and garlic and sauté for another minute, stirring constantly.
4. Add spices: Add the cumin, curry powder, turmeric, chili powder (if using), salt, and pepper. Stir well to combine.
5. Add chicken: Add the chicken pieces and stir to coat with the spice mixture. Cook until the chicken is browned on all sides (5-6 minutes).
6. Add tomato puree and broth: Add the tomato puree and chicken broth (or water). Stir well to combine.
7. Simmer: Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 20-25 minutes or until the chicken is cooked through and the sauce has thickened.
8. Garnish: Garnish with chopped cilantro and serve over basmati rice or with naan/rotis.
Tips and Variations:
Use bone-in chicken pieces for more flavor.
