How to make beef shami kabab
A classic Pakistani dish! Here's a simple and delicious recipe for Beef Shami Kabab:
Ingredients:
- 500g minced beef
- 1 large onion, finely chopped
- 2 cloves of garlic, minced
- 1 teaspoon ginger paste
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala powder
- 1 teaspoon salt
- 2 tablespoons lemon juice
- 2 tablespoons ghee or oil
- 2 eggs, lightly beaten (for binding)
- Breadcrumbs or chickpea flour (for coating)
- Fresh cilantro, for garnish
Instructions:
1. *Prepare the spice mix*: In a small pan, heat 1 tablespoon of oil over medium heat. Add cumin seeds and let them sizzle for a few seconds. Then, add coriander powder, red chili powder, and garam masala powder. Cook for 1-2 minutes, stirring constantly, until the spices are fragrant. Let the spice mix cool down.
2. *Mix the beef mixture*: In a large bowl, combine the minced beef, chopped onion, minced garlic, ginger paste, salt, lemon juice, and the cooled spice mix. Mix everything well with your hands or a wooden spoon until just combined. Be careful not to overmix.
3. *Add the binding agents*: Add the lightly beaten eggs and mix well. Then, add the breadcrumbs or chickpea flour and mix until the mixture is just combined.
4. *Shape the kababs*: Cover the mixture and refrigerate for at least 30 minutes to allow the flavors to meld. Then, shape the mixture into small patties or oval-shaped kababs. You should be able to make around 12-15 kababs.
5. *Coat the kababs*: Dip each kabab in the beaten eggs and then coat with breadcrumbs or chickpea flour.
6. *Fry the kababs*: Heat about 2-3 inches (5-7.5 cm) of oil in a large pan over medium heat. When the oil is hot, add a few kababs (do not overcrowd the pan) and fry until they are golden brown on both sides. Repeat with the remaining kababs.
7. *Serve*: Serve the Shami Kababs hot with a dollop of mint chutney, a sprinkle of lemon juice, and some crispy salad leaves. You can also serve them with a side of basmati rice or naan bread.
